Cook up a delicious carrot cake.
Heat the oven to 180 °C. Oil a square cake tin, and line with baking paper.
Mix sugar, sunflower oil and eggs lightly with a spoon. Add carrots, raisins and orange zest, and mix well.
Sift flour, bicarbonate of soda, cinnamon and nutmeg into the mixture. Stir well.
Pour mixture into tin and bake for 40-45 minutes until firm but spongey.
Allow to cool in tin for five minutes, tip out and let cool completely.
Beat icing sugar and orange juice together until smooth and slightly runny, and drizzle over top of cake.
Garnish as you please - we suggest fresh figs, sprigs of rosemary and candied fruit. Enjoy!
